As the nights get darker and the weather gets chiller, there’s nothing better than settling down for wonderfully warming home-cooked meal when you get home.
But, the prospect of cooking can be daunting, especially if you’re not sure what to make or have limited ingredients.
That’s why we’ve teamed up with local recipe developer and Foodie Book Club founder Lee Majhen-Todd to develop a series of easy-to-understand recipes using staple ingredients to make delicious, exciting and flavoursome dishes that everyone will love.
Lee said “Cooking can often seem stressful, not because the ingredients themselves are unfamiliar but more likely that using the ingredients in a new and flavoursome way is unfamiliar.
“That’s where Foodie Book Club steps in. These familiar recipes are easy to use and have been developed using ingredients that we all have access to; dishes that are tasty which all the family will love; dishes that can be made ahead and frozen making the most of freezer space; using a nose to tail approach to cooking which leads to less food waste cutting down food bills and of course, food that isn’t boring is what Foodie Book Club is about.”
There will be 14 recipe cards in total. Each will be made available for you to download from this page over the next few months.
Each recipe comes with a list of ingredients, step-by-step instructions along with pictures so you can make sure you are on the right track. Lee has also provided some top tips to help you along the way.
We will be offering several Food Banks across our communities printed versions of the recipes that show what can be made with some of the key ingredients in a food parcel.
Lee went on to say “Having written recipes which are easy to use, the main objective is to get them to those who would benefit from them the most.
“We’re hoping that twinning each recipe card with baskets of staple ingredients in food boxes from a number of food banks, will be an easy way to make them free and accessible to every person collecting the staples boxes.
“The selection of recipes available can then be put together to create a re-usable compilation of dishes for main meals, snacks, breakfasts and desserts.”
You can download the recipes below and start cooking up a storm straight away.
As Lee would say, “Go on, give it a go!”
Let Lee show you how it's done with this video demo of Blackberry Meringues with Chantilly Cream:
With thanks to marketing and communications company resource who sponsored the printing of the recipe cards through our Unlocking Social Value programme, which matches the social value commitments of our contractors and suppliers with organisations across the region.
